Mountain trout and rainbow trout are cultivated with loving care in the clear stream from the Ou Mountain Range. Tazawako, the deepest lake in Japan (423.4 meter), is situated near the fish farm.
Grown from spawning, mountain trout is best ripe in 2 years. When mountain trout is in season it has plenty of fat on it. Roasted trout melts in your mouth.
